My Oh, My! It’s Raw Pecan Pie!
I am back Vegan Princess followers. I have been so busy, I will catch you guys up on all that has been going on in the life of Vegan Princess.
Meanwhile I been in the kitchen stirring up some yummy raw creations and I want share, my latest delicious dessert. Here goes. Please tell me what you think.

Raw Pecan Pie
Ingredients
2 cups raw almonds, germinated
35 pitted dates, soaked for 1 hour and drained
1 tablespoon fresh lime juice
1/4 teaspoon ground cardamon
1/4 teaspoon ground coriander
1/4 teaspoon sea salt
1/2 teaspoon vanilla extract
2 cups raw pecans, germinated Cold-pressed extra-virgin olive oil, to grease your pan
Procedure
1. Combine the almonds and 10 of the dates in a food processor, and process until they are coarsely ground and clumping together. Grease the bottom of a 9-inch a pie plate with a little cold-pressed olive oil to keep the pie from sticking to the plate. Press the almond-and-date mixture evenly into the bottom of brownie pan and up the sides to form a crust. Set aside.
2. Combine the remaining dates, the fresh lime juice, cardamon, coriander, salt, and vanilla in a blender or small food processor, and process until the mixture has a smooth, uniform consistency. Spread the date filling evenly over the crust. Arrange the raw pecans on top of the date mixture and press lightly.
Oh My! Raw Lemon Pie!
We are at the heels of summer! The warm sunny days, the delicious tastes of summer fruit, and the endless time of sitting around the pool soaking up the rich Vitamin D. Yes, I love summer time. Because of the warm days you will need something cool and refreshing to tantalize your taste buds.
This great treat is a bonus to the ending of any great meal. It is also power pack with great nutrients that will feed your cells and strengthen you immune system. Let us go through a few of the ingredients and see the wonderful benefits.
Lemon – High in Vitamin C . Cleanses and regenerates the blood. Coconut – Great sources of Magnesium, Iron, and Potassium Macadamia Nut – Rich in Niacin, Phosphorus, and Magnesium

Ingredients:
Crust
1 c macadamia nuts 1 c shredded coconut
1 t lemon zest 2 T agave nectar
pinch of salt
Place macadamia nuts, salt and shredded coconut in food processor, chop until fine. Add lemon zest and agave nectar processor until well mixed.
Oil and 9 in pie dish with a little coconut oil. Press the mixture into the pie dish. Put pie plate in the freezer while you make the filling so the crust will firm up.
Filling
2 c young coconut meat ½ c agave nectar
¾ c melted coconut oil ¼ c lemon juice
2 t lemon zest pinch of salt
½ t turmeric 2 t vanilla extract
In a Vita Mix on high speed blender, blend all of the filling ingredients until smooth. Pour the filling into the tart or pie pan. Chill in the freezer until set, 3-6 hours.
