Wrap it up in Green!!!!

My life is very busy.  I am in school, I have several business, and I work out.  I have decided though I owe it to my readers to post on a regular basis.  I do apologize for being tardy about the Collard Green Burritos or Wraps that some may call it.  So here it is.

Collard Green Burritos or Wraps

The night before wash,  cut the stems out of the leaves and marinate them use a kitchen brush. Be sure to leave the collard green leaf attached.

Marinate

1/4 c lemon juice

1/4 c olive

pinch of salt.

This will cause the collard greens to become tender.

Walnut Taco “Meat”

1 1/2 cup of walnuts soaked over night

1 1/2 t coriander

3/4 t cumin

2 T Braggs Liquid Aminos

1/4 t cayenne

Soak walnuts over night drain and place all ingredients in a food processor.

Raw Cashew Cheese

1/4 of red bell pepper

1 cup water
½ c cashews, soaked and drained
1 ½ T chopped onion
1 garlic clove
2 t agave nectar
¾ c yeast flakes
2 T tahini
1 ½ t  lemon juice
¼ c olive oil
pinch of cumin
pinch of cayenne
1 t sea salt

Place in a blender and blend until smooth.

Chop up romaine lettuce, avocado, green onions, jalapenos, tomatoes.

Assembly

Place a collard green leaf on a plate, spread a little cashew cheese first, then walnut taco meat, top off with the salad mixture.  Roll it up and there you have it.  Yummy delight!  If you have any questions please post them in the comments.
