Let’s Have a Picnic! Mock Chicken Salad

Spring is here and it is high time to get out of that winter gear and put on the fresh bright colors.  This time of year I love to go to one of my favorite spots and sit by the lake with friends and munch on great vegan and raw food.  This is one of my favorites that I have made for outdoor gatherings, dinner parties and my lunches to go.

The crackers shown in the photo are fiesta flax crackers., my own recipe.  I am currently working on selling these on line.  But if you want a similar recipes goes to, http://www.freshtopia.net, Tanja’s Flax Cracker

1/4 C sunflower seeds
1 C cashews
1 cucumber, peeled and seeded and cut into chunks
2 green onions, cut into smaller pieces
1 T. yeast flakes
1 celery stick, cut into chunks
1 tsp. dried dill
½ tsp. salt
juice of 1/2 a lemon

Chop fine cucumbers and green onions put them aside.  Put all other ingredients in a food processor and chop until medium to fine.  Combine all ingredients and mix thoroughly.
